Tonight I had my parents over for dinner to celebrate my mom's belated birthday. She'd already celebrated two other times so she requested that I make a low-fat meal. I made everything light from the salad all the way until the dessert. Here's what I made:
1. Feta-Strawberry Salad with homemade dressing: romaine lettuce, pecans (just a pinch), strawberries, low-fat feta, and my homemade dressing that consisted of raspberry vinaigrette, balsamic vinaigrette, dijon mustard, garlic, dash of olive oil, teaspoon of brown sugar
2. Jersey Tuna Melt - one slice of rye bread with 1/2 slice of 2% cheddar cheese, tuna with miracle whip, onions, green pepper, parsley, and pepper, and a slice of tomato under the cheese
3. Pineapple Upside Down Cake - For making the yellow cake I used Break-free eggs, pineapple juice, and apple sauce for the oil!
All of this was much lower in calories and fat than if I'd made the regular recipes. Good news is...my family loved it!
