I've been making a lot of healthy meals for my family that involve a lot of produce.  Our garden has so many vegetables I almost don't know what to do with them all!  We live on a farm and I'd like to start living off the land more as I heard the cost of produce and beef is going up due to the drought down south.  If I didn't work I'd take the time to learn canning and freezing things properly so we could have more throughout the winter.  Last night I made a delicious meal that was extremely low-fat and contained broccoli, onion, and peppers from our garden.  I want to make meals for my family that are based on fresh foods.  I'd like to stay away from frozen foods if I can.  Here's what I made:

2 cups cubed, cooked chicken

2 cups fresh broccoli

1/2 cup green pepper

1/2 cup onion

2 tbsp. dijon mustard

1 cup Miracle Whip

1 clove garlic

Mix them all together.  Preheat at 425.  Put a glass in the middle of a pan with aluminum foil.  Roll out a Reduced Fat Crescent Roll to look like a sun with the pointy edges away from the glass.  Put a scoop of the mixture in a circle all the way around the glass.  Fold the pointy end over the mixture.  Cook for 25 minutes.  It was delicious and all ingredients were low in fat and calories!

1 cup coffee with tsp. fat-free creamer

Snack -

Lunch -

JC Pasta Ole

Grilled zucchini and squash

Snack -

3/4 cup strawberries

Dinner -

JC Spaghetti and Meatballs

Salad (mixed greens, peppers, mushrooms, tomatoes) 2 tbsp. light ranch

Snack -

JC Key Lime Pie
